Sweet Potato Hash

 

Creating a healthy seasonal breakfast is easy with our Sweet Potato Hash.  Our Junior Chefs created this vibrant side dish that makes a colorful and nutritious plate!  It was rewarding to see the kids enjoy it while knowing important nutrients (A, C, Iron, Magnesium) that build strong bones, provide immunity and combat stress are all a part of the tasting.  Add color and nutrition to your plate with your kids.

Add in breakfast sausage for protein and top it with a fried egg for a complete meal. Or, go vegetarian and lighter with just our sweet potatoes and vegetables.  Kids love the color and smell of this dish.

Sweet Potato Hash
Serves 8
A breakfast hash made with sweet potatoes and breakfast sausage. Add optional eggs to make it a complete one-dish meal.

Ingredients
  1. 3 medium sweet potatoes, very small cubes *adults will need to prep this
  2. ½ small yellow onion, chopped
  3. ½-1 red and or green bell pepper, diced
  4. 1 tbsp olive oil
  5. Sprinkle of salt
  6. Sprinkle of Ground black pepper
  7. 3 tsp Garlic powder
  8. Pinch of Paprika
  9. ½ lb. breakfast sausage
  10. 6 eggs, optional
Instructions
  1. Preheat large skillet. Add the breakfast sausage and cook on med-high.
  2. Break apart and stir occasionally until the sausage is completely cooked.
  3. Remove from pan.
  4. Add olive oil. Add onions and peppers to the oil.
  5. Saute for a few minutes.
  6. Add the sweet potatoes and cook until fork tender.
  7. Add seasonings, and the sausage back in. Mix thoroughly.
  8. Serve with an over easy or over medium egg on top, optional.
TIPS
  1. PreCooking the Sweet Potatoes saves a lot of time to put this recipe together in less than an hour. Place your cleaned sweet potatoes whole in the microwave (or oven) and cook on high for 6 minutes. Flip over the potato to the other side and cook for another 2-3 minutes. Check on the potato, when the fork or knife can be easily inserted, then you can let them cool to cook and use in recipe at a later time.
