Pumpkin Chocolate Chip Muffins

  2. 3/4 cup granulated sugar
  3. ½ (15 ounce) can pumpkin puree
  4. ½ cup oil
  5. 1/3 cup water
  6. 2 eggs
  7. 3/4 cup all purpose flour
  8. 1 cup whole wheat flour
  9. 2 tsp ground cinnamon
  10. 1 tsp ground nutmeg
  11. 1 teaspoon baking soda
  12. 1 teaspoon salt
  13. 1/2 cup semisweet chocolate chips

  2. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch loaf pans or line 12-15 muffin cups.
  3. In a large bowl, combine sugar, pumpkin, oil, water, and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and salt. Fold in chocolate chips. Fill pans 1/2 to 3/4 full.
  4. Bake for 30 minutes (~15 minutes for muffins), or until an inserted knife comes out clean. Cool on wire racks before removing from pans.
