Chocolate Chip Pumpkin Pancakes

Celebrate fall in your mouth with our Chocolate Chip Pumpkin Pancakes! A sweet tribute to our change of season, these satisfying pancakes are made with whole wheat flour, pumpkin, and sweetened only by the chocolate chips. Here in the Kids Kitchen, our Jr. Chefs were intrigued by the texture and smells as they mixed the pumpkin with the inviting pumpkin spice. Ingredients
  1. 1 ½ cups buttermilk OR milk (+ 2 tbsp lemon juice or white vinegar)
  2. 1 cup pure unsweetened pumpkin puree
  3. 2 large eggs
  4. 2 tbsp oil
  5. 2 cups white whole wheat flour (Or 1 cup all purpose and 1 cup whole wheat flour)
  6. 4 tsp baking powder
  7. 2 tbsp pumpkin pie spice (see Tips below)
  8. ½ tsp salt
  9. ¾ cup chocolate chips, optional
Instructions
  1. Prepare the Pancake Batter: In large bowl – whisk together milk, pumpkin, eggs, oil. In a separate bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt. Add the dry ingredients to the pumpkin mixture and stir just until all is moistened. Add the chocolate chips in if using. Batter will be thick.
  2. Cook the pancakes: Preheat a large skillet or griddle to medium-high, and lightly grease with butter or oil. Use an ice-cream scoop or ladle to add the batter to the pan. Spread the batter into a nice, even circle. Cook the pancakes 3 or 4 minutes or until you see bubbles popping up. Gently flip the pancake with a spatula and cook an additional 2 or 3 minutes.
Notes
  1. If you do not have pumpkin pie spice, use this combo instead: 1 tsp allspice, 1 tsp cinnamon, 1 tsp ginger, ½ tsp cloves, ½ tsp nutmeg.
  2. If you use whole wheat flour, it provides MORE fiber, protein, and nutrients.
  3. Milk – You can use whatever you have on hand.
  4. This recipe can easily be cut in ½, FREEZE what you don’t eat!
  5. What about the syrup? Try honey drizzled on top, slightly-sweetened cream cheese icing, or real maple syrup)
