Banana Split Parfait

Kids are going to go wild with this week’s recipe!  Bananas ‘Split’ between layers of honey-sweetened Greek yogurt, and our Skillet Granola. YUMMO!  Topped with fresh strawberries or cherries and mini chocolate chips make this a Banana Split Parfait not to forget.

  1. 2 cups Vanilla Greek Yogurt
  2. 1/2 cup Granola
  3. 2 banana
  4. 1/2 cup diced strawberry
  5. Garnishes: (optional)
  6. Cherries
  7. Sprinkles
  8. Chocolate
  1. Prepare the fruits by dicing up the pineapple (optional), strawberry and banana.
  2. Spoon 1/4 of the yogurt into the bottom of each cup.
  3. Top the yogurt with the granola, banana, strawberry.
  4. Spoon the remaining ¼ cup yogurt onto the top.
  5. Garnish with cherries, sprinkles, or chocolate shavings!
  1. Skillet Granola
  2. Ingredients
  3. 1 cup old-fashioned oats
  4. ¼ cup slivered or chopped almonds (optional) *Avoid in schools or nut free facilities
  5. ¼ cup flax seed (optional)
  6. 1 tbsp olive oil
  7. 2 tbsp honey
  8. Sprinkle of salt and cinnamon, to taste
  9. ¼- ½ cup dried cranberries (or raisins, apricots, or blueberries)
  10. Directions
  11. Heat a large skillet/pan to medium heat. (Electric skillet can be used for a larger batch)
  12. Add all ingredients except dried fruit. Stir and coat oat mixture evenly.
  13. Continue to stir, every couple of minutes. Cook for 15-20 minutes.
  14. Add dried fruit.
  15. Remove from heat, and lay out for mixture to cool.
  16. Store in an air-tight container. Serve as snack, on top of yogurt or frozen yogurt, or with milk as a cereal.
